Potato & Bacon Pizza

prep + cook time 35 minutes  serves 4

2 x 335g pizza bases

2 tablespoons olive oil

4 rindless bacon slices (260g), chopped coarsely

2 cloves garlic, sliced thinly

1 tablespoon coarsely chopped fresh rosemary

½ teaspoon dried chilli flakes

500g potatoes, sliced thinly

80g (1 cup) finely grated parmesan

 

1     Preheat oven to 220°C/200°C fan.

2     Place pizza bases on oven trays; bake 10 minutes or until crisp.

3     Meanwhile, heat oil in a large frying pan over medium-high heat; cook bacon, garlic, rosemary and chilli, stirring, 5 minutes. Remove from pan.

4     Cook potato in same heated pan, stirring frequently, for 10 minutes or until tender.

5     Sprinkle each pizza base with 27g (⅓ cup) of the parmesan. Divide bacon mixture and potato between bases; top with remaining parmesan.

6     Bake pizzas for 5 minutes or until browned lightly; season to taste.

 

serving suggestion 

Serve with a rocket and flaked parmesan salad.
